XYbake GO (Glucose Oxidase)

XYbake GO is special Glucose Oxidase for baking. In the presence of oxygen, glucose oxidase highly specifically catalyzes the β-D-glucose and produces gluconic acid, which simultaneously produces hydrogen peroxide. Hydrogen peroxide oxidizes the sulfhydryl SH group in the gluten to the disulfide bond SS, which strengthens the dough performance, improves the dough extensibility, improves the bread instant spring in oven, increases the bread volume.
